Icing Formulas

Cream Icing

Ingredients
Lb/oz
6X Sugar
10 lb
Icing Shortening
5 lb
Salt
0.5 oz
Water
1 lb/12 oz
Flavoring
to taste

Process: Weigh dry ingredients and shortening into mixing bowl. With mixer running on low speed, gradually add one-third of the water and mix 4 minutes with paddle attachment. Slowly add remaining water and flavor while mixing at low speed. Continue mixing 4 minutes. Scrape down mixing bowl and continue mixing about 10 minutes or until desired smoothness is obtained. A higher speed can be used at this stage to produce a lighter icing.

Note: Nonfat milk solids, 4 ounces per batch, can be added at the first stage to produce a faster drying icing.

Decorator Icing

Ingredients

6X Sugar
10 lb
Icing Shortening
3 lb
Salt
0.5 oz
Water
1 lb/12 oz
Glucose
8 oz
Nonfat milk solids
10 oz
Flavoring
to taste

Process: Combine all ingredients except water. Gradually add water, mixing at low speed with paddle attachment until smooth.

Cream Filling

Ingredients
Lb/oz
Nonfat milk solids
1 lb/4 oz
Icing Shortening
5 lb
Simple syrup
10 lb

Process: Weigh dry ingredients and shortening into mixing bowl. With mixer running on low speed, mix with wire whip attachment until smooth. Slowly add simple syrup with mixer running on low speed. Whip at medium speed for 15 minutes.
